I've built controllers to do just that but I doubt you will find much
support for doing it on a one off basis.
Remember that the field in a series wound motor takes full current. So
you are talking about a full power controller just on the field. Also
at 2V you are getting close to the usual controllability limit for motor
controllers and you likely won't have very fine control over the current
if you take that route.
If you set the current in the field to that used during normal running
you will reduce the motor torque. If you set it to the current during
high load/accel then you will likely overheat the motor and you will
reduce the top speed.
That said it is certainly possible, just not simple.
