New Holland Yellow is supposed to be an exact match, and it appears to me
that it is. John Deere Yellow is more readily available, and close
enough if you're painting entire assemblies.

If you have the steel brake, junk it and buy an upgrade kit from Bill
Gunn at Technical Service (608 868-6220). It bolts on in an afternoon.
If you have the cast brake, there's a different kit (I think just pads
and a brake rod).
Either way, you'll finally have brakes that really work. It's a 1000%
improvement.

I've never measured it. As a guess -- generally, a lead battery is
considered discharged when it its voltage falls to 1.75 volts per cell
under load. So "E" probably corresponds to 31.5 volts or so.
Your charger should bring the batteries up to 44.4 to 45.0 volts, as
measured with a voltmeter while on charge. (I'm going from theory on
this, since I don't use the original ET charger.)
After the charger is unplugged and they've had several hours for the
surface charge to dissipate, the open circuit voltage of a fully charged
pack in good shape should be around 37.8 to 38.25 volts.

Contact Bill Gunn, as described above.
Good luck on the project!
