I'd leave the 2 resistor step in.  If I had one of the versions that uses field reduction for higher speeds, I'd add a lockout switch so that full normal power would be supplied to the armature, and normal field.  That should be the most efficient way to run the motor.  My ET has a PM drive motor, so I don't have the field reduction, just 3 speeds, with the 2 resistors and full battery to the armature.  I only pass through those 2 resistor speeds for spooling up to full, and choose the gear for the ground speed I want.

BTW, it's not that I don't think a modern controller improves the ET.  It
absolutely does, and I like mine a lot.
