I don't recommend doing this.  
A group 27 battery will have roughly half the amp-hour capacity of a 6v 
battery (about the same weight, half the amp-hour capacity, double the 
voltage, thus about the same watt-hour capacity).  

Thus the 12v battery will discharge faster, limiting your running time to 
about half what it would be with proper 6v golf car batteries. It will 
also 
depreciate faster because of the deeper discharge.   (Marine 12v batteries 
never last as long as golf car 6v batteries anyway.)

If you do try it, don't count on having a usable 12v battery when the rest 
of the pack is ready for replacement.

Probably your best bet is to look harder for used golf car batteries.  Try 
calling some of the area golf courses; sometimes they swap out batteries 
in 
the spring for the new season.
