If you're doing a full restore I would consider a modern, electric controller.  It's a lot of work, but it's worth it.  Nice smooth transition through speeds, you can even wire in the cruise control switch to a separate potentiometer.   I can't recall anyone who put one in regretted it. 

If you're a purist, and looking to restore it back to factory condition...well, multiple varisters will do the job, but it might be overkill.  The Varisters usually fail because they are like 40 years old and have been abused over that 40 year period.  A new varister should last you another 20+ years.  You could multiple, but as long as you don't use the reverse as a break one should do it.

Can only get it through an Ariens dealer and it is expensive. $20 per can. Internet forums said Allis Chalmers Orange is a match. Found a can, and low and behold we have a winner. So if you are painting an I-5 Allis Chalmers Orange is your best bet. Easy to find and cheap.

Second thing are those pesky Varistors. We all hate them because they blow, but they are necessary. Was speaking with an electrical engineer friend of mine and he said "Why don't you just run 4 in parallel?" Yeah they are stack able. Instead of one taking all the brunt, i have four taking 1/4 of the brunt each. Should last a lifetime.
