The entire 'tip', in your illustration should be sharpened. I have
sharpened, or had sharpened, blades that only had one half to three
quarters
on an inch of thickness left.The big issue is maintaining balance. It seems
to be more challenging, the thinner and lighter the blades become.
I have had some sharpeners also attack the 'bent' portion of the blade.
I
have been told that this was to achieve the final balance, without
sacrificing any more of the cutting end, than was necessary.
